Brown Sugar Cookies. No Fuss.

January 10, 2009

I made these this weekend: http://www.101cookbooks.com/archives/brown-sugar-sandwich-cookies-recipe.html but as I have next to no trends towards neatness and care, I made them my own more sloppy way. Instead of building sandwiches, I just dipped the toe of each small cookie in melted chocolate.  I also had no whole wheat flour, so I used a combination of general purpose unbleached flour, and rye flour.
Yum indeed.

Pretty low on the guilt scale too!

A joint collaboration between Andy, Allrecipes.com, and I.

We started off with this sugar cookie recipe:
http://allrecipes.com/Recipe/Easy-Sugar-Cookies/Detail.aspx

To loosen the dough add:
1 tbs bourbon (Andy’s idea)
3 tbs buttermilk (My idea)

The resulting dough will be a fluffy sugar cookie batter. Just dry enough to form into 1.5 inch balls with your palms. (Add more buttermilk if needed) Roll these balls in a 50/50 mix of cinnamon and sugar. Place the dough balls on a greased baking sheet and bake at 375F for 8-12 minutes. They should be soft and puffy.
